Vitamin D can be found in egg yolks, salmon and other foods, but people in the north US may be more likely to have vitamin D deficiencies because we get this vitamin from the sun as well as some foods. According to the Harvard School of Public Health Nutrition Source Vitamin D is necessary to absorb important minerals such as calcium. This vitamin is being studied for it's many properties including : "laboratory studies show that vitamin D can reduce cancer cell growth, help control infections and reduce inflammation. Many of the body’s organs and tissues have receptors for vitamin D, which suggest important roles beyond bone health, and scientists are actively investigating other possible functions. Now is a great time for getting more local veggies. Here is one way to do that: Breakfast Garden Omelette - ingredients = 6 eggs, 1 medium red potato, 1 red sweet pepper, spring onions (1 or 2), tomato, medium or 6 cherry tomatoes.
Place 1/4 cup olive oil in frying pan to heat on low medium.
Microwave the potato 4 minutes, then slice thinly, along with sliced peppers and onions. Saute' until potatoes begin to brown. Add sliced tomato, then eggs. Eggs can be whisked prior to adding. Cook until eggs get solid, then flip to finish cooking. Add shredded cheese if desired and salt/pepper to taste. This serves 2. You can refrigerate and reheat in the microwave. Red potatoes are a great source of fiber because the peeling is usually consumed. Here is some nutrition information: One medium red potato (with the skin) contains 3g of dietary fiber per serving. Red potatoes provide a great source of fiber because the skin, where the majority of the fiber is located, is consumed regardless of the preparation. Not only is this a gut-health benefit, but also because the fiber gives potatoes their substance, which will help you feel full longer. The same amount of fiber in potatoes is found in many whole grain breads, pastas, and cereals. Red potatoes have at least 10% of the recommended daily value of Vitamin B6.

Younger and younger adults are diagnosed with diabetes every day. Among adults ages 20 to 74, diabetes remains the leading cause of kidney failure, blindness, and non-traumatic lower-extremity amputations. Type 2 diabetes, once called adult-onset diabetes, is striking an ever-growing number of adults. Even more alarming, it is now showing up in teenagers and children.

Is it possible to reverse or cure diabetes? The answer is yes and maybe. When someone reports that they have “reversed” their diabetes, this actually means that they were able to stop using diabetes medication after making healthy lifestyle changes, such as losing abdominal fat, following a healthful diet, decreasing stress and exercising. If prediabetes, type 2 diabetes, or gestational diabetes is detected early in an individual who immediately initiates healthy lifestyle changes, it may be possible to reverse progression of the disease.
While our genes can be a small part of determining who is at greater risk of developing type 2 diabetes, our lifestyle habits are actually more important.
