Lemon Chia Dressing

~ 5T lemon juice, fresh squeezed
~ 2T olive oil
~ 1T minced shallots
~ 1T Dijon mustard
~ 2 tsp chia seeds
~ 2 tsp raw honey
~ 1 tsp minced garlic
~ Pinch S&P

Whisk all the ingredients in a small bowl. Store in a jar in the refrigerator. Enjoy over your best salads! 🥗😊

Chocolate Almond Butter and Strawberry Jelly Bites
~ 1/2 cup almond butter
~ 1/2 cup Arbonne strawberry protein powder
~ 1 cup Hu chocolate gems
~ 1 T coconut oil
Equipment:
1 silicone mini-muffin pan
1 large bowl
1 small glass bowl
1 small saucepan

Combine almond butter and protein powder in a large bowl until well combined. It will be very thick (I used my hands for the final mixing). Fill each muffin with approximately 2 tsp of the almond butter mixture. Place muffin pan in the freezer. Bring a small amount of water in saucepan to boil. Lower heat to simmer and place small glass bowl in the saucepan (it should rest on top of pan). Heat chocolate and coconut oil in a small glass bowl until thoroughly melted. Remove muffin pan from freezer and pour approximately 2-3 tsp of chocolate into the almond butter. Freeze for about 30 min. Place in a container and store in refrigerator. Enjoy!!!

Egg Roll in a Bowl

1 lb grass fed ground beef
6-8 cups cabbage, shredded
1 cup carrot, shredded
5 cloves garlic, minced
1 tsp toasted sesame oil
1 tsp fresh ginger, grated
1 tsp apple cider vinegar (ACV)
1/2 cup coconut aminos*
4 scallions sliced (optional)
Sesame seeds (optional)

In a large skillet, brown the ground beef.

In a small bowl, wisk together the garlic, sesame oil, ginger, ACV and coconut aminos. Set aside.

Add the cabbage and carrot to the beef in the skillet and toss to combine. Stir in the dressing mixture.

Cover and cook until the veggies are soft, about 15 min. Garnish with scallions and sesame seeds. Enjoy!

* can substitute soy sauce for the coconut aminos

Turkey Vegetable Soup...a beautiful and tasty balance of the Ayurvedic tastes of sweet and bitter!

I always make this the week after Thanksgiving when I have that turkey carcass that I don’t want to be wasteful and throw out. So here is my recipe:

1 turkey carcass, with all the roasting pan drippings
1 lg onion, diced
3 stalks celery, sliced
2-3 med/lg carrots, sliced
2-3 med/lg parsnips, sliced
2-3 sm/med turnips, cubed
1 lg rutabaga, cubed
3-4 T olive oil
1 bunch kale

This soup starts with making your own homemade broth.
Place the turkey carcass and all the pan drippings in a large pot and cover with water. Bring to a boil and then reduce heat to low. Simmer for at least 3 hours to get all the goodness from the bones and cartilage...lots of wonderful collagen in this broth! Remove from heat and allow to cool fully. Remove the carcass and all the bones from the broth. If you want meat in your soup, at this point you can pick any meat from the carcass and add it to the broth.

Preheat oven to 400°.

I use all organic veggies. Wash them thoroughly and prepare as mentioned above. Add the veggies and olive oil to a large bowl. Mix until the veggies are evenly covered with the oil. Place the veggies on a large baking sheet. Bake at 400° for approximately 30 min until they are slightly softened, easily pierced with a fork and nicely caramelized. Add the veggies to the broth.
To serve, wash 1 kale leaf. Tear it into small pieces and add to your bowl. Ladle the hot soup over the kale and allow it to sit for a few minutes to wilt the kale. Goes well with some toasted crusty bread.
