Craving comfort? 🍲 This healing chicken noodle soup isn’t just delicious—it’s packed with nutrients to nourish your body and soothe your soul. 💛✨ Ready to feel better from the inside out?
Ingredients:
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breasts, shredded
pepper
4 scallions, white and green parts separated and finely chopped
2 tablespoons ginger
2 garlic cloves, minced
6 cups low-sodium chicken broth
2 tablespoons low sodium soy sauce, plus extra as needed
2 packages of ramen noodles (3 ounces each), discard flavoring packages
3 cups shredded coleslaw mix
3 cups baby spinach
1 tablespoon sesame oil, plus extra as needed
Directions:
1️⃣ Heat vegetable oil in a large soup pot over medium high heat. Pat the chicken dry with paper towels and season with pepper. Brown the chicken lightly in the soup pot on both sides and continue to cook completely, shred it, then transfer it to a plate.
2️⃣ Add the scallion whites, ginger, and garlic to the chicken juices in the pot and cook over medium heat for about 1 minute. Stir in broth and soy sauce.
3️⃣ Add the chicken, cover, and allow it to simmer for about 1 minute.
4️⃣ Stir in the noodles and coleslaw mix and cook until the noodles are tender, about 4 minutes. Stir in the spinach, scallion greens, and sesame oil. Optional: add additional pepper, soy sauce, and sesame oil to taste. Serve hot.
