Pork rack can dry out fast, and nobody wants sad gray pork. So we did what we do best…

Served with sweet-n-tangy warmed sauerkraut + apples.🤤
STEPS:
✔️ 138°F for 6 hours
✔️ Pat completely dry (crispiness depends on it)
✔️ Score the fat cap in a diamond pattern — don’t cut into the meat
✔️ Season generously with Omaha Steaks Seasoning
✔️ Sear in screaming-hot cast iron until blistered and crackly
✔️ Rest 10 minutes
✔️ Slice between the bones
