Here's a creamy, dreamy, fiber-filled breakfast you can take with you on the go!
Start with:
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
2/3 cup cashews (I use raw cashew pieces bc they are way cheaper)
Pour some hot water over your seeds and let them soak about 20-30 min. Alternatively you can just use room temp water and let them soak overnight.
After the seeds have soaked, drain and rinse them, then add them to your blender.
To the blender add:
π₯Milk to the 4 cup line - about 3 cups (any milk will do, regular, almond milk, oat milk, lite coconut milk).
π Juice of 1 whole lemon or orange
3 T maple syrup
2 tsp vanilla
1/2 tsp salt
Blend until smooth (about 1 min).
Grab 4 jars (1/2 quart, 2 pint jars).
Add 2 T. Chia seeds to each jar. Pour in the seed milk mixture, filling eat jar about 2/3 the way full (gotta leave room for toppings)!
Set in the fridge for a couple hours. The chia seeds will soak up the liquid and thicken it to a pudding consistency.
ADD TOPPINGS!!! My fav combos include:
β Blueberry, banana, peanut butter π₯
β Strawberry, banana, cacao nibs
β Mango, kiwi, coconut flakes, h**p seeds
The sky's the limit here!
Take it with you on the go (I love using frozen berries when taking it on the go bc they help keep it cold and thaw in time for lunch)!
