The flours are made from 100% grape seeds and skins. After the wineries press the grapes for their juice, the pomace is transported just a few miles to our small flour mill located in Hector, NY. The grape seeds and skins are hand sorted, separated, sun dried and artisan stone milled. Our wine flours are meant to supplement your recipes with flavor, color and nutrition. In addition to antioxidants, vitamins and minerals, each tablespoon adds two grams of protein and three grams of fiber! Chardonnay Ravioli Recipe:
Ingredients_________________________________

Ravioli Dough:

2 cups all-purpose flour

1/4 Wine Flour (depends on your preference)

1 pinch salt

1 teaspoon olive oil

2 eggs

1 1/2 tablespoons water

Ravioli Filling:

1 (8 ounce) container ricotta cheese

1 (4 ounce) package cream cheese, softened

1/2 cup shredded mozzarella cheese

1/2 cup provolone cheese, shredded

1 egg

1 1/2 teaspoons dried parsley

Egg Wash:

1 egg

1 tablespoon water

Pinot Noir Sour Cherry Pie:
Crust Recipe:
2 1/2 cups all purpose flour
2-4 Tablespoons of Pinot Noir Flour
1 teaspoon salt
1 cup butter, cold and cubed
1/2 cup ice water, plus more if needed to make it come together
Mix flour and salt together.
Add cold cubed butter to the flour mixture and mix in using a fork, pastry blender, or food processor until completely combined and resembles sand.
Add in ice water until mixture until the dough comes together.
Roll into two flat disks. Wrap in plastic wrap. Refrigerate for 2-3 hours.
Roll out on a lightly floured surface, place in a pie pan, fill with pie filling, top and bake per recipe.

SUNDAYS are for pancakes ALL DAY
Make them with Merlot Wine Flour for a pretty color.
Recipe:
1 ½ cups all-purpose flour
2 tablespoons Merlot Wine Flour
2 ½ teaspoons baking powder, aluminum-free
½ teaspoon salt
2 tablespoons sugar
1 ¼ cups milk, any
1 egg
3 tablespoons butter, melted
2 teaspoons vanilla extract
Heat a non-stick griddle or large pan over medium heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F. If you grease it with butter and it browns, the surface is too hot.
Immediately, pour ¼ cup of batter onto the greased surface. This batter doesn't spread, so use the back of a spoon or the scoop to shape it. Cook the first side for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook the second side for a little less time. Avoid pressing down on the pancake with the spatula after flipping; this will make the pancakes dense by eliminating the air pockets and/or cause the batter to ooze out on the sides and be undercooked.
Remove the cooked pancakes from the pan and repeat the process with the remaining batter, serving the pancakes as you go or keeping them warm on a sheet pan in a 200F oven.
