Ground turkey quesadilla- with onion, bell pepper, black beans and corn added. I use 93/7 ground turkey and 50% less fat Cabot cheese! Add a salad on the side.... and you have a fiber filling dinner! It can be gluten free if you use a gluten free tortilla. The picture doesn’t really doesn’t do it much justice. I will put the recipe in the comments.
