Excellent source of Vitamin K and B1
Why eat it?
Digestive Health- Asparagus contains a type of fiber called fructooligosaccharides
(FOS), which aids in digestion by selectively encouraging the growth of friendly bacteria in your gut.
Blood Health- Vitamin K and folate (B1), which are both found in generous amounts in asparagus, are needed for the manufacture of red blood cells and for blood clotting. Folate is also an important nutrient for women in the first 12 weeks of pregnancy because it helps protect babies from neural tube defects such as spina bifida.
Bone Health- The Vitamin K present in asparagus also helps bones absorb calcium; studies show that women with high levels of Vitamin K in their blood may be less likely to develop osteoporosis.
