Celebrate the first day of autumn with a warm, gut-healthy bowl of Lentil & Vegetable Soup! Packed with fiber, plant-based protein, and prebiotics, this cozy soup is perfect for cooler weather and supporting your digestive health.
✨ Ingredients
1 cup dried lentils (rinsed)
1 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
2 cloves garlic, minced
1 can diced tomatoes (no salt added)
4 cups low-sodium vegetable broth
1 tsp cumin
Salt & pepper to taste
Fresh parsley for garnish
✨ Directions
Heat olive oil in a large pot and sauté onion, carrots, and celery until softened.
Add garlic, cumin, and lentils; stir for 1 minute.
Pour in tomatoes and broth; bring to a boil.
Reduce heat and simmer for 25–30 minutes, until lentils are tender.
Season, garnish with parsley, and enjoy!
