Nothing like a little stuffed pepper 🌶️ I usually just cooked some ground turkey on the stovetop with some onions and then mix in fresh rice and tomato sauce (always because it’s the best) - then just stuff it in a par baked bell pepper and roast for 30 mins at 375!

Side salad is super simple as well, just some butter lettuce, red onion, chickpeas, and cucumber with a drizzle of caesar dressing. Scrumptious lunch!

In an effort to get out of the ‘eggs everyday for breakfast’ habit, I decided to whip up a batch of chia pudding, and boyyyy am I glad I did.

Simply combine and mix the below ingredients & leave to rest overnight:

2 tbsp chia seeds
1/2 cup almond milk
1/2 cup dairy free yogurt
1 tsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon

Back from an amazing trip to France, where I ate allllll of the delicious cuisine! I’m so grateful for my experience but am also so happy to be getting back into the regular routine.

Nothing sounded better to me tonight than a nice nutritious sheet pan dinner - simply roasting red pepper, onion, zucchini, and sweet potatoes alongside chicken thighs with a touch of seasoning and olive oil!

I also drizzled some green goddess on top for some extra pizzazz ✨

A little love for the viral carrot ribbon salad recipe - the kind of recipe where you just measure from the heart 🫶🏼

A splash of sesame oil, tamari, and rice vinegar, a sprinkle of sesame seeds & chopped scallions, and a little spoonful of chili crunch 👨🏻‍🍳 💋

Excited to share what has become my hyperfixation meal - cucumber salad! I usually serve it alongside either salmon or chicken but either way, it’s absolutely delicioussss and nutritious! I make a big batch and eat it for multiple meals.I’ll give some estimates on the amount of each ingredient below but I would just advise you to measure with your heart 🫶🏼 Slice the big ingredients on a mandolin/by hand and then mix everything together suuuuper well

Cucumber Salad 🥒
whole english cucumber
half of a small red onion
1 cup shelled edamame
2 small whole carrots
half of an avocado
2 green onions
some sort of crunchy slaw mix (i love using cruciferous crunch or just a broccoli slaw mix)
sprinkle of furikake
1 tbsp paleo mayo
1 tsp sriracha
3 tbsp tamari
2 tsp toasted sesame oil

Air Fried Salmon 🍣
I set my air fryer to 400 degrees for 17 mins, and coated the salmon filet in a bit of dijon mustard and salmon rub very generously
(this is the most delicious way i’ve prepped salmon!!)

Switched it up with breakfast tacos today!

I made mine with potato hash, sautéed peppers and red onion, sliced avocado, and of course some eggs. Finish with a dash of hot sauce and 👌🏼

For the potato hash, I just cut potatoes into small cubes and roasted at 400 degrees for ~30 mins alongside diced yellow onions, drizzled with olive oil and italian seasoning.

I saw .thornton’s recipe for an erewhon-inspired white bean and kale salad and knew immediately that I had to make it for dinner. It’s such an easy weekday dinner recipe, coming together in under 30 minutes.

Salad:
a bunch of curly leaf kale, chopped and massaged
1 avocado
1 tbsp each of pumpkin, sunflower, and h**p seeds
15.5oz can of cannellini beans

Dressing:
1/4 cup olive oil
juice of 1 lemon
1 tbsp dijon mustard
1 tbsp maple syrup
salt + pepper

Salmon:
I love to rub my filet with dijon mustard and then generously sprinkle salmon rub on top, pop into the air fryer at 375 degrees for 17 minutes and serve!

Happy to share a delicious meal I concocted, comprised of beautifully seasoned ground turkey, cannellini beans, arugula, lemon juice, high quality olive oil, red pepper and onions. This is a super easy skillet meal that warmed my soul during these chilly days.

What an absolute whirlwind the holiday season was - and it continues well in to the new year!

Thanks for baring with me as I attempt to get my bearings again; I haven’t been as inspired in the kitchen as I would like to be. It really makes me realize that food is an outlet for creativity for me, and given my hectic work and life schedule at the moment… my creativity has been stifled 😵‍💫

Alas, we’ll get it back.

thanksgiving recap 🍁 this year my plate was very lovely and balanced with turkey, mushroom gravy, mashed potatoes made with , butternut squash, thyme & honey roasted carrots, and green beans - served alongside a nice crisp glass of sauvignon blanc

also just wanted to share my carving job on the turkey… my mom picked up a 22lb bird for 4 people 😂 leftovers were delicious

a rainy day inspired these scrumptious s’mores cookies - i’ve had absolutely fantastic feedback on these so had to share:

1 cup almond flour
3/4 cup tahini
1/2 cup maple syrup
1 scoop collagen (i used marine collagen)
1 cup chocolate chips
1/2 cup walnuts
1/2 cup vegan mini marshmallows

mix together and then refrigerate for 30 mins, then add and mix
1 egg
1sp baking soda

scoop into balls and sprinkle sea salt on each cookie, then bake at 350 for around 15 mins

Quick little coverage on my most recent dinner party to celebrate fall seasonal ingredients 🍂🍁🎃

While I failed to take many pictures, I think the highlight for me (aside from quality time with my dearest friends and loved ones) was the olive walnut vinaigrette that can be used in so many applications! I served it on some crispy roasted chicken thighs and would absolutely make it again.

I’m surprised by how polarizing bean soup is within my social circle but I will proudly share my recipe anyway 😌

For meeee, it’s such a good weeknight recipe because it comes together in one pot so quickly! Just sauté some sliced onion and chicken sausage in olive oil, add drained and rinsed chickpeas (spin it by adding cannellini or butter beans), 4 cups of chicken broth, any seasonings you’d like, and some water to balance it out! Then I just bring everything to a boil and let it simmer for 20ish mins to let the flavors combine.

It’s a delicious, high protein, and light recipe that makes a big batch to enjoy for the rest of the week and I will not take this slander!
