Soup instead of salad in the cold weather months?? YES.
A giant jar for easy storing? YES.
For years now l’ve tried to keep a giant bowl of greens and non starchy vegetables (salad) ready to grab and dress in the fridge during the warm weather months. It requires some planning, a salad spinner, chopping time, and room in the fridge, but it’s always ! As the weather changed, along with my cravings, I decided to come up with a soup recipe utilizing the same concept and make it a habit every week.
The bonus with both habits are; they ensure zero waste of all the veggies!
Swipe right for this recipe and as the ingredient list suggests; feel free to experiment! I used rainbow and regular chard for the greens and have been extremely pleased with the results!
When 1/2 your plate needs to be non starchy vegetables at every meal, these two habits make it mindless to execute .
Remember: This soup is NOT a balanced meal. It’s only the vegetable portion
