Good things come in small packages
Mung beans are high in fiber and protein and digest much easier than other legumes. High in anti inflammatory properties, they are a perfect addition to a diet. Mung beans when pre spouted , can be eaten raw in salads or tossed with spices and eaten straight. I like to steam them add add them cooked to millet or a "bowl" . According to Ayurvedic medicine, mung beans considered medicinal and one of the keys to a long, vibrant and healthy life.• Green Mung Beans are considered to be “sattvic” – a heavenly, good food due to the ease in absorption and digestion. • They are a tridoshic food due to the ancient super bean’s ability to be eaten by people of all dosha’s – the vata, the pitta, and the kapha.
This freezes well and can also be mixed with roasted cauliflower and served as a dhal.
Ingredients
1 package sprouted mung beans
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
2 tbsp. Grapeseed oil
2 tbsp. Brags amino acid
1 tbsp. Garlic powder
1 tbsp. Onion powder
1 tbsp. Pink sea salt
3 tbsp. Sweet miso paste
Water to cover plus 1 cup
Heat oil in a large pit and add the vegetables and spices, when fragrant add the spices and the mung beans with water, turn heat to medium and let this soft boil until beans are al dente. Remove half and pulse in a processor add back to the soup and add in miso paste.
