Quick, easy, and healthy breakfast sandwiches! 🥪
Get your day started right with these meal prep-friendly recipes.
Recipe:
In a bowl, whisk (or blend) 12 eggs with a splash of milk, a pinch of salt, and pepper to taste.
Pour the egg mixture into a lined half sheet pan, then sprinkle your choice of chopped veggies on top.
On a separate lined sheet pan, arrange vegan breakfast sausages.
Place both sheet pans in a preheated oven at 350˚F. Bake for approximately 17 minutes, or until the eggs are fully set.
Remove the pans from the oven and allow them to cool.
Using a mug, cut out 12 rounds from the cooked eggs to fit onto English muffins.
Assemble each sandwich by placing an egg round, a sausage patty, and a slice of cheese between the two halves of the English muffin.
Wrap each sandwich in parchment paper and enjoy!
For immediate consumption:
Heat the sandwiches at 350˚F for about 6 minutes, or until the cheese is fully melted.

A whole meal in one pot! 🍚
Follow this easy recipe for a delicious beef and veggie rice cooker meal.
Recipe:
In a bowl, mix 2 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tbsp honey, 1 tbsp water, 2 minced garlic cloves, and 1/2 tsp black pepper.
Slice 6 oz of beef (I used sirloin) and add it to the marinade. Set aside to let the flavors meld.
Rinse 1 cup of rice and add it to the rice cooker along with 1 cup of water.
Add 1/2 diced yellow onion, 1/2 cup diced carrots, 1/2 cup diced bell pepper, and 1/2 cup frozen corn on top of the rice.
For a richer flavor, you can add about 1 tbsp of butter to the dish.
Turn the rice cooker on and let it cook.
Optional: Once cooked, garnish with sliced green onions for added flavor

Perfect for busy mornings. 🥞
Recipe:
In a large bowl, mix 3 cups of pancake mix, 2 1/4 cups of milk, 2 eggs, and a sprinkle of cinnamon.
Pour the batter onto a lined sheet pan and add your favorite toppings.
Bake in a preheated oven at 425˚F for 13 minutes, or until the pancake is golden brown.
Once baked, cut into squares and enjoy!

Indulge in a guilt-free treat with these delicious Chocolate Truffles! 🍫 Made without sugar or white flour, they’re the perfect dessert or frosting for cupcakes:
Ingredients
8 oz unsweetened organic baker's chocolate chopped into tiny pieces
1 cup organic heavy cream
1 tsp pure vanilla extract sugar-free
1/4 tsp Himalayan sea salt
1/2 tsp Stevia extract powder
1 tsp expresso powder optional
Instructions
Heat the cream, vanilla, stevia, espresso powder, and salt until bubbles form.
Remove from heat.
Add chocolate pieces and let melt, stirring occasionally.
Let the mixture cool to room temperature, and then chill slightly in the refrigerator.
Roll into truffles. Then roll into toppings of choice if desired.
