Not all fats are the same. Did you know that fats (lipids) are actually essential for your health? They fuel your body and help build cell membranes.

But, since fats don't mix with water, your body has tiny "taxis" called lipoproteins that transport them through your bloodstream.

Sunday at the Hopkins Raspberry Festival

First time at the Raspberry Run - 5 miles around Shady Oak Lake. Not winning any speed records but felt good to finish!

Little man ran the kids quarter-mile race. He loves to play chase with us at home, and the kid oriented races this summer have been so much fun for him!

Visited the renovated for food, then caught the always amazing parade down Mainstreet.

It was a good day out with the family! ✨

Weekend harvest: fresh garlic scapes from our garden!

Cut them right at the base, tossed with olive oil, and roasted at 350°F for 8 minutes. It's so simple and delicious.

The garlic scapes are packed with allicin just like the bulbs, which research shows supports heart health, has antimicrobial properties, and helps lower cholesterol levels.

Garlic is one of the few vegetables the deer and rabbits actually leave alone in our yard.🦌🐰

The tender tops are the best part. The bottom can get a bit tough depending on when you harvest.

Such a satisfying way to get double duty from our garlic plants while we wait for the bulbs to mature at the end of the summer.

While sunscreen and protective clothing are essential tools in the fight against sunburn, did you know that your diet can also play a significant role in protecting your skin against UV rays?

Specifically, lycopene, a powerful antioxidant found in various red and pink fruits and vegetables, reduces the severity of sunburns.

Lycopene is a carotenoid, a natural pigment that gives certain fruits and vegetables their red or pink color. Lycopene is a phytochemical with powerful antioxidant properties which help neutralize harmful free radicals in the body. These free radicals can cause DNA damage and inflammation, including the kind inflicted by UV radiation.

Lycopene is not something that our body produces naturally, so we must obtain it from a diet rich in colorful fruits and vegetables!

According to research, increasing your lycopene intake can significantly reduce the severity of sunburns. Studies indicate that a diet rich in lycopene can decrease sunburn severity by about 40%. This was observed by less redness and inflammation of the skin after exposure to UV light.

The sun protection of lycopene isn’t immediate, but requires a consistent intake over time. It takes at least 10 weeks of consistent lycopene intake for it to accumulate in the skin to offer significant sun protection. This timeframe suggests it’s best to start eating more lycopene-rich foods near the early springtime to prepare for the summer months!

Homemade marinara is an underrated superfood.

It’s rich in antioxidants like lycopene (especially when simmered!) and can pack in even more nutrients when you make it yourself.

I always encourage people to whip up their own tomato sauce. It doesn’t take much extra time, and the flavor and nutrient-density are so worth it. Plus, you control the ingredients (and skip the added sugar and preservatives found in many store-bought versions). Add garlic, onions, extra virgin olive oil, herbs, and even finely chopped veggies.

For those with picky eaters, you can blend the veggies to hide them.

I personally love adding blended roasted red peppers to my marinara sauce!

Eating foods that contain high amounts of lycopene can lessen the severity of sunburns!

Tomato paste is the best source of dietary lycopene.

Watermelon, grapefruit, ketchup, and fresh tomatoes contain lycopene too!

Research shows that eating more lycopene decreases the severity of sunburn by about 40%. The amount of lycopene needed for this benefit is two heaping tablespoons (40 grams) of tomato paste daily for 10 to 12 weeks. Yes, that's a lot!

Throughout the sunny months, consider eating more lycopene-containing foods to increase your resilience to sun rays, especially if you are fair-skinned and tend to sunburn easily.
