Myth vs Fact: Hood cleaning frequency.
Myth: 'I only need to clean my hood once a year.'
Fact: NFPA 96 sets cleaning frequency by cooking volume, not by calendar date. A 24-hour high-volume kitchen needs monthly service.
A moderate-volume sit-down restaurant needs quarterly. A low-volume kitchen might get away with semi-annually.
'Once a year' is a violation for almost every commercial kitchen in Houston.
