🍓 Strawberry Oatmeal Bars (Vegan | Refined Sugar-Free)
Strawberry Filling:
• 3 cups diced strawberries
• ⅓ cup pure maple syrup
• ½ lemon, squeezed
• 1 tbsp chia seeds
Crust & Crumble:
• 2 cups old fashioned rolled oats
• 1 cup almond flour
• 1 cup oat flour
• ⅓ cup unsweetened applesauce
• ¼ cup pure maple syrup
• ½ cup Cream Cheese, softened

Instructions:
1. Make the filling:
In a saucepan, combine strawberries, maple syrup, and lemon juice. Bring to a low boil, then simmer 8–10 min, stirring often, until reduced. Stir in chia seeds and let thicken for 5 minutes.
2. Preheat oven to 350°F.
Line an 8x8” pan with parchment.
3. Make the crust/crumble:
In a bowl, mix oats, almond flour, oat flour, applesauce, maple syrup, and Darë Cream Cheese until thick and sticky.
4. Assemble:
Press ⅔ of dough into pan. Spread strawberry filling evenly. Crumble remaining dough over the top.
5. Bake 28–30 min or until golden on top. Cool completely before slicing.
🍓 Store in fridge up to 1 week or freeze for later.
