Herb-Roasted Salmon with Veggies 🐟🥦

Bring a burst of flavor to your dinner table with this scrumptious herb-roasted salmon dish, loaded with vibrant veggies! It's healthy, simple, and ready in no time!

Ingredients:
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 2 salmon fillets about 6 oz each
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 cups baby potatoes, halved
- 1 cup broccoli florets
- 1 teaspoon dried oregano
- Fresh parsley, chopped for garnish
- Lemon wedges for serving

Instructions:
1. Preheat your oven to 400°F (200°C) to get it nice and hot for roasting.
2. In a large mixing bowl, combine the halved baby potatoes, cherry tomatoes, and broccoli florets. Drizzle 1 tablespoon of olive oil over them, and sprinkle with garlic powder, oregano, paprika, salt, and pepper. Toss everything well to ensure the veggies are evenly coated with the seasonings.
3. Spread the seasoned vegetables evenly on a baking sheet, creating a colorful layer that will roast beautifully.
4. Take the salmon fillets and rub the remaining 1 tablespoon of olive oil on both sides. Season them generously with salt, pepper, and a light sprinkle of paprika for extra flavor. Place the salmon fillets on the baking sheet alongside the veggies.
5. Roast everything in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender. Keep an eye on the veggies as they soak up those delicious flavors!
6. Once cooked, garnish with fresh parsley to add a touch of color and serve warm with lemon wedges on the side for a refreshing squeeze. Enjoy your meal!
