Stuffed Steak Rolls
Instructions:
1. Preheat oven to 350°F.
2. Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15–20 minutes. Remove from heat and set aside.
3. Lay the flank steak on a cutting board. Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top. Press down lightly to compress the spinach. Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
4. Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10–15 minutes, until medium rare.
5. Remove the toothpicks, then serve! Makes 6!

Wood Choppers!
Start with your feet shoulder-width apart and parallel to each other. Hold a medicine ball or weight with both hands. With the medicine ball at the outside of one hip, lift and rotate the dumbbell up above the outside of the opposite side of your head. If you start at your right hip, you will lift it up to the left side of your head. As you lift, pivot your right foot to aid the rotation and elevation of the weight, then bring the weight to your right hip.

-Fresh fruit and veggie platter
-Deviled Eggs: made with avocado & turkey bacon bits
-Chicken Kabobs with tomato, pepper, onion
-Flank Steak roll ups with kale, parsley and spices
-Guacamole- tomato, red onion, cilantro, jalapeño & lime
-Chick pea salad w/diced cucumber mint or basil
-Brown rice pasta salad- avocado mayo, broccoli florets, sliced olives, celery
-Grilled clams or steamed with garlic/lemon/organic butter
-Puree any fruit - peaches, watermelon, mango with Stevia and a touch of almond milk, FREEZE in individual cups
