A must try recipe to add to your Thanksgiving menu! 🤌

A hearty, vegetable-forward stuffing made with sautéed onion, fennel, celery, mushrooms, and fresh herbs. Walnuts and sunflower seeds provide rich texture and healthy fats. Can be served as a fully plant-based side or prepared with optional ground turkey or sausage for added protein. A flavorful, nutrient-dense alternative to traditional stuffing.

Grain-free Vegetable Nut Stuffing

INGREDIENTS
½ large sweet Vidalia onion, coarsely chopped
1 large fennel bulb (white part only), halved and cut into ¼-inch strips
4–5 celery stalks, including leaves, chopped
¼ cup extra virgin olive oil
1 cup organic vegetable or chicken broth
½ tsp rubbed sage
¼ tsp oregano
½ – 1 cup chopped walnuts
½ cup raw sunflower seeds (soaked if possible)
8 oz mushrooms, chopped
Sea salt and ground pepper, to taste
2 tbsp chopped fresh parsley
½ – 1 lb ground turkey, turkey sausage, or chicken sausage, crumbled and cooked (optional)

INSTRUCTIONS
Heat olive oil in a deep sauté pan. Add onion, fennel, and celery. Cook over medium heat until lightly browned.
Add broth, bring to a boil, then reduce heat to low and cover.
Simmer for 20 minutes. Stir in sage, oregano, salt, and pepper.
Add walnuts and sunflower seeds. Cover and cook 5 minutes, stirring occasionally.
Add mushrooms and cooked meat if using. Cover and cook 10–12 minutes, stirring occasionally. Adjust liquid as needed by uncovering to reduce or adding more broth if too dry.
Taste and adjust seasoning.
Sprinkle with chopped parsley before serving.
