Need a fast cooking veggie to add to your meal pronto? Tender spinach leaves are the ticket. For a cooking short-cut, purchase pre-washed, baby spinach that has smaller leaves, better flavor, and cooks in under 5 minutes. Follow the directions below:

Place the broth in a large skillet that has a matching lid or stockpot. Cover and place over
medium-high.

As soon as the broth comes to a simmer, add the spinach, garlic, salt and lemon
pepper or pepper. Toss the spinach well and cover.

Turn off the heat and rest 4 to 5 minutes to allow the leaves to wilt but not overcook. Squeeze the lemon over the spinach and serve immediately.

Burgers are practically an American institute! This paleo version harnesses that “tasty” factor from powder chipotle chili, smoky chili powder with a hint of heat. Follow the steps below:

Preheat the oven to 400 ̊F. Place the ground chicken or turkey, cilantro or parsley, chipotle,
garlic powder, salt, and pepper in a small bowl and mix well to incorporate the herbs and spices.

Form into a burger patty.

Cover an 8x8 baking dish with parchment paper. Place the patty on the parchment and bake 30
to 35 minutes, until the chicken is cooked through and no longer pink in the inside.

While the burger is baking, prepare the collard. Bring 3 inches of water to a boil in a large skillet.

Add the kale or collard leaf to soften 1 minute. Remove immediately from the water and drain
on a paper towel. When the burger is cooked, wrap it in the collard leaf and serve immediately
with tomato and mustard.
