For this week’s spotlight, we talked to Melissa Stuber! Melissa is an LADC and the Intern Supervisor here at Integrations Wellness and Recovery. She has been at IWRC since 2022! She cites Brene Brown as an influence in helping others; specifically, her contributions to positive psychology. When asked about a favorite book, Melissa gave The Energy Bus by Jon Gordon. We asked if there has been anything she has learned from clients that has stuck with her; she spoke about perspective. Our clients come from many different walks of life. Learning about their experiences has aided her approach in helping others.
When she isn’t working, Melissa enjoys spending time with her grandchildren and pets. She also enjoys being outdoors, crocheting, and cooking. A favorite recipe of hers is chicken enchiladas, check out the recipe below!
Important values of Melissa’s are being open and teachable; she tries to model those values as much as possible. One misconception she would like to correct is that recovery/treatment is easy; it is many things but easy is rare! For Melissa, a great day means she is making a difference in someone’s recovery journey. We part with a favorite mantra of Melissa’s and her chicken enchilada recipe!

Chicken Enchiladas
2 lbs chicken (breast or canned)
2 C. chicken broth
2 Tbsp corn starch
1 can diced chili peppers
1 C. sour cream
16 oz. Monterey Jack shredded cheese
Queso Fresco Cheese (either round or shredded)
1 diced red onion
2 Tbsp minced garlic
Black pepper (to taste)
6 burrito tortillas
Cilantro (to your preference)
Lettuce, tomatoes, or other toppings of choice
Cook and shred chicken breast (or used canned chicken).
Sauté onion and garlic together, until tender, add in chili peppers.
Add chicken broth mixed with corn starch, cooking until thickened.
Mix in sour cream, and ½ amounts of Monterey Jack and queso cheese.
Add pepper and cilantro to taste.
Use ½ of cheese sauce and mix with chicken, place this mixture into a tortilla and place in baking pan.
Use the rest of the cheese sauce to smother over the rolled tortillas.
Put more onion and cilantro on top prior to baking (as preferred).
Cover with the rest of the Monterey Jack and Queso cheese mix.
Bake at 425 for about 30 minutes.
You can top with lettuce, tomato, or other toppings of your choice.
