I spent this afternoon doing a cooking demonstration for one of my clients! π©βπ³ She lost her husband last year and has been dealing with lack of appetite leading to weight loss. He always made the two of them tuna melt sandwiches for lunch, so I did my best to mimic his recipe β€οΈ
When planning a menu for seniors- portion size, ease of cooking, and even food texture (soft, small bites) should be taken into consideration.
We made egg cups with fire roasted tomatoes, spinach, and shredded cheese. This will last her all week. We also added blended cottage cheese to her tomato soup for added calories and protein. I sautΓ©ed fresh vegetables to use as a side dish to seasoned chicken over pasta with Alfredo sauce. I also brought ready-made protein shakes and frozen strawberries to add some variety as a daily supplement to her meals.
