🍎 **Healthy Foodie Friday** 🌿
Simple, nourishing, and full of flavor — our Roasted Chicken & Seasonal Vegetables is the perfect way to end the week! Packed with fresh rosemary, thyme, and a colorful mix of veggies, this dish is as wholesome as it is delicious.

Ingredients:
4 oz. boneless chicken breast
5 brussel sprouts, halved or whole
1/2 cup mushrooms, sliced
10 baby carrots
5 cherry tomatoes
1/4 red onion, chopped
2 garlic cloves, minced
1 tbs extra virgin olive oil
Salt and black pepper to taste
3/4 tbsp fresh rosemary
3/4 tbsp fresh thyme

Method:
Heat oven to 400°
On a baking sheet, place all vegetables (except garlic) and the chicken breast.
Drizzle with 1 tbs olive oil.
Spread 1/2 of the garlic over chicken. Sprinkle the rest over the vegetables.
Sprinkle fresh herbs over the whole sheet of veggies and chicken.
Cook in oven for about 30 minutes or until chicken reaches internal temp of 165°

Farewell & Best Wishes to McKayla!

Today, we’re closing early at 12 PM to celebrate our amazing medical assistant, McKayla Moy Sab. 💚

For over 4 years, McKayla has been a vital part of our team—caring for patients with warmth and dedication. She’s now pursuing her dream of becoming a Naturopathic Doctor, and we couldn’t be more proud!

We wish her all the best in this exciting new chapter and hope to welcome her back to IWC one day as a clinician.
