Sunday dinner heading into the crockpot! Meal #2 prepared a week ago at our freezer meal event! For label directions I reminded myself of what needed to be added during the cooking process. Thanks to Julie Penrose for the great tip she shared in our class! 🎉

Another meal in the books without a kitchen! Was motivated by watching “Somebody Feed Phil”!
It definitely takes longer to make a meal and clean up and we definitely appreciate a home cooked meal so much more!
Last night’s dinner, grilled salmon, from scratch risotto with spinach and a salad!
If you have not seen Somebody Feed Phil on Netflix, check it out. So many awesome recipe ideas! I have taken notes and cannot wait to cook in my new kitchen! If they work out,they may end up on the menu at a future cooking class🫐🍓🥕

⭐️Choosing my path for 2026⭐️
On Christmas Eve I was standing at the bottom of Mount Bohemia in the Upper Peninsula of Michigan, gazing at three beautiful trails. I pondered over which trail would I take if I was skiing? I have not downhill skied in years, and the thought of even going up the chairlift was overwhelming.
I was sitting in a warm steamy sauna very content and knew that I am only on vacation and soon would be back home with a new year starting soon. Vacations are a great time to reflect renew and restore. Then I thought, “Life, like skiing, it is not lived in the lodge or at the bottom of a mountain, it is found in the descent”!
So what life path would I choose for 2026?
⭐️A path of discipline: perfectly groomed, smooth and predictable. A path that is about mastering the fundamentals of health, routine and steady progress.
⭐️A path of discovery: winding trail with hidden adventures. A path that is about navigating life’s complexities with agility and the unexpected discovery of hidden gems.
⭐️ A path of courage: steep run that takes total commitment, full of challenges and high adrenaline. A path that is about growth, testing limits and realization of strength.

2026 is here, I am at the top of the mountain, I have leaned forward and started my decent.

As I navigate my chosen path I know, just like downhill skiing, sometimes, an obstacle can get in the way and I may fall or slide on my butt until I can not go any further.

The beauty of life is that we are not alone. We have others to support us and lift us up. Like my fear of riding a chairlift, it is not easy getting in the chair and thank goodness for the workers helping you on the chair! And that view as we climb to the top…. Just beautiful!

Once we reach the top, we take a deep breath, pick a new path, lean forward and start another decent into the unknown.

Perfect timing! Crockpot Freezer Meals were ready for us as the blizzard approached!
A group gathered together at Bethel Lutheran Church’s Kitchen to prepare some vegetarian freezer meals that can be thrown in a crockpot!
We had a great time visiting, meeting
new friends, learning about new recipes and sharing cooking tips!
Thanks to a Thrivent Gift Card for helping to supplement the cost of supplies and Bethel Lutheran Church for supporting these community gatherings!

We prepared 4 freezer meals each: apple oatmeal, taco soup, sweet potato bean tacos, artichoke white bean stew!
