Jamaican Jerk Tilapia with a blackberry balsamic glaze served with sweet potato purée and coconut asparagus!

Ok- before the recipe, I need to say, this was incredible! I was sad for it to end!

Recipe for 2

Four 4 oz. tilapia filets
1 T. Jerk seasoning
1 cup balsamic vinegar
1/2 cup blackberries
2 small sweet potatoes
Sea salt & pepper
Large bunch of asparagus
2 T. Coconut oil

Sprinkle jerk seasoning on tilapia, cover and keep in the fridge until ready to be cooked.

Poke holes in the sweet potatoes, wrap in tin foil and roast in a 375 oven for 45-1 hr until completely softened. Remove skin and place in food processor or blender with 1/2 of water, salt & pepper and whip until smooth.

Trim the asparagus and toss with salt, pepper & 1 T. Coconut oil. Roast at 375 for 10 minutes.

Place balsamic vinegar and blackberries in a sauce pan over medium heat stirring occasionally until balsamic reduces down to 3-4 T. and berries are completely broken down.

Place 1 T. Coconut oil in pan over medium high heat and sauté tilapia for 4 minutes on each side.

Assemble as shown, and devour!!!

Frozen peanut butter filled bananas dipped in melted IsaDelights chocolates! A delicious, way to kill those sweet cravings. Thanks Dilla for the recipe!

"Cut up banana slices and then fill peanut butter between them. Put them in the freezer for 1 hour, take 4 IsaDelights melt in microwave and then roll Frozen Banana's in the melted chocolate and place them back in the freezer for another 2-3 hours. And enjoy!"
