Tonight when you are getting ready for bed, look in a full length mirror with love in your eyes and say 5 nice things to yourself. If you can't do 5, start with 1. I promise that it will get easier each time you do it. If you are not in the habit of this, your body will react like any small child who has had mean things said to it over and over...it will fight back and say "no I'm not! it's not true!" but pretty soon it will finally believe you, and then you will believe you, and then you will feel a deeper happiness :)

I don't know if y'all have heard about brining your chicken in pickle juice, but I tried it for the first time tonight and it is for real! Possibly the best chicken I have ever had! I used the brine from Grillo's pickles and soaked the drumsticks overnight. Using a homemade gluten-free batter I coated the clicker baked it in olive oil. It's a new family favorite, there will be no leftovers tonight! Sometimes cooking gluten-free can seem really complicated and sometimes it is super easy. This was a super easy recipe for the win!
