Day 1 breakfast for RP diet. This is a lot of food… going to take me forever to eat it. Lifted first thing this morning. I will need to figure out my caloric count as the RP app doesn’t count calories just macros.

1/2 cup of all three… might have gone overboard with the blueberries 😝 but I can eat the leftover throughout the morning...

Did my first half marathon this past weekend in Savannah. I have been having a hard time lately with motivation and staying on track. COVID weight gain has been real with me. I wanted to do something that was out of my comfort zone; one of my besties, Sarah, suggested a half marathon. The conditions were difficult race day… low 40s and raining the whole day. But I finished! I really wanted to finish under 3.5 hours and I beat that! 2hrs53min.

Turkey Egg Roll In a Bowl (servings 5 I will probably make this 6 servings next time)
-1 lb ground Turkey
- 5 tsp mince garlic
- one package coleslaw mix
- 7 tbsp Bragg Liquid Amino
- 1 tsp ground ginger
- 2 tsp Sriracha
- 2 eggs
- 1 tbsp sesame oil
- 1/2 tbsp sesame seeds
- 4 green onions sliced

Brown the Turkey, I put in half the Braggs Aminos in this step (didn’t drain it the meat). Add the garlic and sauté for about 30 seconds. Move aside the mix so there is a spot in the center of your pan and add the egg. Scramble the egg and then mix together. Add sesame oil and sriracha sauce.

187 calories, 5.3g fat, 6.1g Total Carb (2.3g fiber), 28.6g Protein
