Thai Basil Beef Rolls 🥩🌿

Crispy on the outside, juicy inside—these bold, 5-ingredient rolls are your new weeknight favorite!

Ingredients (makes 4–6 rolls):
1 pound ground beef

2 cups fresh Thai basil leaves

1 medium bell pepper, thinly sliced

1 tablespoon soy sauce

1 package rice paper wrappers

Cooking Instructions:
Cook the Beef:
Brown ground beef in a skillet over medium heat for about 5 minutes.

Add Peppers & Sauce:
Stir in soy sauce and sliced bell pepper. Cook for 2–3 more minutes.

Add Basil:
Remove from heat and fold in Thai basil until wilted. Let cool slightly.

Soften Rice Paper:
Dip one rice paper wrapper into warm water for 10–15 seconds to soften.

Assemble Rolls:
Place wrapper on a flat surface. Add a spoonful of beef mix to the lower third.

Roll Tightly:
Fold the bottom over the filling, tuck in sides, and roll up firmly.

Repeat:
Continue filling and rolling the rest.

Pan-Fry:
Heat a bit of oil in the skillet. Cook rolls seam-side down for 2–3 minutes per side until golden and crisp.

Serve:
Let cool briefly, then enjoy warm.

It's been a busy couple weeks! Work has been crazy and we have tried to get in more exercise with the weather getting better. We did a 7 mile hike last Saturday and plan another tomorrow.

I wanted to give you guys some information about oxalates. Oxalates come from plants and nuts and can cause a lot of issues including but not limited to kidney stones.

I'm going to let you guys go down the oxalate rabbit hole, but want to share these pics with you to get you started. For me they wreak havoc including bladder issues and kidney stones. I first learned about oxalates from my endocrinologist and wish I had cut them from my diet sooner.

Anyone think these could be an issue for you too?

Carnivore is protein and fat grams. One gram of protein is 4 calories and one gram of fat is 9 calories. Striving for your ideal weight in protein is a good guide. For me that means 140g of protein daily and about 14g of fat per day as well. This puts my calorie intake at 1820 calories per day.

Getting all of the protein in can be difficult. We make protein coffee every morning and start off our day with 35g of protein. We add a scoop of collagen (we like Vital Proteins unflavored) and Within You Carnivore Steak Shake unflavored to get a jump start on protein. You can get the carnivore protein powder at www.withinyou.com and Vital Proteins at Sam's or Costco. Each one lasts about a month. Getting a subscription to the Carnivore protein will save you about $8 per bag.

Update and full disclosure time! Monday will officially be one year that we have been carnivore/ketovore. In the past year we have dropped a combined 70lbs and with the exception of about 5lbs each (I'll explain why in a little bit) we have kept it off.

Ben has cut his insulin by about 60%. That's huge because insulin causes coronary disease. He is 30lbs lighter, less brain fog, neuropathy pain is gone, sleep is great (neither of us snore now), and energy is so good!

I have put autoimmunes in remission, reversed insulin resistance (insulin resistance leads to T2 diabetes), lost 40lbs, lots of energy, no kidney stones for the first time in 30 years, sleep is great, energy is high, anxiety is slowly getting under control, belly fat is gone, liver and kidney function are fantastic, the list goes on and on!

Will we keep this up? For now I'm going to say yes. We've learned to make lots of things carnivore to keep it from being boring. Carnivore pancakes, "cornbread" muffins, tortillas, pizza crust, flat "bread" wraps, nachos. It's all possible and it's all good!

We have eased up a little bit the past couple of months and I had labs done last week. I was surprised to see that my cholesterol was elevated some and so were my Triglycerides. Not a huge rise, but still a rise. My fasting insulin had also jumped by just over a point. Remember that extra 5lbs? Its all tied together. I thought about why, and remembered I've been eating nuts lately (no nuts aren't carnivore). While nuts are a great source of fats and protein, they are also high in carbs, especially when you are eating them frequently. Seriously who eats 10 nuts and stops? So, the nuts are gone and I am curious to see how quickly the weight goes away and lab levels drop. I'll recheck labs again in a few months to make sure everything has leveled out.

Overall this has been an amazing experience and one we plan to keep as our lifestyle for now.

It's almost a year now that we have been carnivore. We were very strict when we started and stayed strict until recently. Carnivore heals your body and that healing takes time.

The past few weeks we have started adding in a few things that don't bother us. These are all very low carb and balanced out with plenty of protein and fat. These are also only about two meals per week. Out total carb intake for the days we eat this way is still typically less than 20g.

One of the things I miss is a really good sandwich, so tonight we did chicken sandwiches without the bread. Grilled chicken, tomato slices, pickles, onion, avocado, and mayo. It was delicious!

Who shops at Costco? We like Sams, but Costco is a game changer! We feel like the selection and quality is much higher at Costco. The downside? Our closest Costco is almost 1.5 hours away. That means when we go, we do a major haul that will last about 2-3 months. Katie and I went today and it was our biggest Costco shopping trip to date. We had almost $100 in instant savings and had the car packed.

We will both try and show you some of the things we always buy at Costco and why we love them over the next week. If you're trying to clean up your food and save money, Costco is a must!

One thing we use if we find a new product we are unsure of, is this app. It was created by Bobby Parrish and give you so much great information. Who loves beef shanks? Who has had beef shanks? They are a totally overlooked piece of the cow and honestly, one we had never cooked until we started buying a whole cow.

Shanks are the upper leg, usually sliced in rounds about 1" thick. They are super simple to cook and one of our favorites. Plus, they are typically very inexpensive. They usually come bone in, which I love because it gives us the delicious marrow, collagen, and gelatin from the bones. Not to mention the minerals that cook out of the bones.

Leg muscles are used a lot, so this makes shanks a very tough cut of meat. Cooking low and slow makes the connective tissues break down and become tender and delicious.

Shanks are super easy to cook:

Slice 1-2 onions in the bottom of a large Dutch oven and then add in the shanks with the bones. Add salt and pepper to each layer of the meat as it goes in the pot. Slice up a stick of butter and place it over the top. This is optional, but give it a richness you wouldn't otherwise get. Pour in about 2 cups beef broth or beef bone broth and cover. Place in a 325° oven for 5-6 hours. They will be falling apart and almost shred themselves as you take them out of the pot.

We topped it with a blend of shaved parmesan, Asiago, and Romano cheese and it was delicious.

Dinner tonight looked similar to lunch, but because we prepared it differently it didn't feel like we ate the same thing and tasted completely different! That is one thing that we live about keto/carnivore. IT IS SIMPLE!!! One chicken burger, one beef burger, and one egg! Here's a tip for all of our sauce people. Leave your eggs a little runny and use that delicious yolk to dip your meat in!

One thing that gets said a lot on this page is "I just can't give up *insert food item here*...." if you are a soda drinker here is a great option for you! Give Zevia sodas a try. They are available at Walmart, Target, Publix, Amazon, etc and give you a great soda taster without the sugar, artificial sweetners, artificial colors, and artificial flavors. These are also great for kids when you are trying to avoid artificial dyes!

A super easy keto (almost carnivore) lunch!

These bowls were made with ground beef, ground chicken, eggs, cheese, and a little bit of spinach. These could easily be made ahead of time and enjoyed for any meal!

Our Story

This whole journey started when my parents decided that they wanted to get healthier as they aged. It started with small dietary changes and over several years became a journey we were all a part of. Kids, dogs, cats, neighbors. It quickly became a lifestyle and we are so thankful to be able to share it with so many people!

Learning new ways to keep ourselves healthy and cut the toxins out of our life was our goal and I am here to tell you that it does not happen over night. We have spent the last 10ish years learning, experimenting with different products, making major dietary changes, and realizing how easy it really is and how much better we all feel!

So why did we start this page? We wanted to take some of the struggle out of it for you! Whether you have already started your journey to a healthier life and are just looking for some new recipes or if you have just been thinking about but get overwhelmed by the thought we are here to help! All of our recipes are gluten free and can easily be converted for vegetarian and vegan life styles as well. We also like to share our favorite tips and tricks for toxin free living. We love our essential oils and have been amazed at all of the toxic products we have eliminated by using them. We are far from knowing it all though so don’t feel like we have it all perfected! We share tons of articles here from some of the people that we have followed along the way so that you can learn from them also.

We get asked a lot how we got into essential oils. Here is the truth. There was a person in our community that was selling Premium Starter Kits to help fund their upcoming adoption. We had heard a lot about essential oils, but never really bought into it. How could those little, smelly bottles of oil really help us out? Honestly, we bought our starter kit thinking that we had bought some nice healthy air freshener that would eliminate some of the toxins from our home. We never intended to use them for much more. Fast forward 5 years and we have not had a sick doctor visit since! We use them for everything: the babies, pets, cleaning, cooking, immune support. You name it there is an oil for it!
