BROCCOLI HAM & CHEESE CRUSTLESS QUICHE (FRITTATA)
This crustless quiche is a delicious, low carb lunch or dinner. It's super easy to make, taking only 30 minutes before it's ready to pop into the oven. Serve as it is, with potatoes, crispy salad or stuff into rolls or wraps 🥦🥚🧀🥖🍖🥘

RECIPE:
Serves 4
Ingredients 🛒
Broccoli Florets, cut in half or quartered depending on size
200g/7oz Bone-in-Ham, chopped
1 Small Onion, sliced
100g/3.5oz Cheddar Cheese, shredded
8 Eggs
3/4 Cup Elmlea Double Cream (Heavy Cream)
1/4 Teaspoon Ground Nutmeg
Salt & Pepper

Method:
In a little olive oil and teaspoon butter cook the onion and broccoli. When the onions are softened, stir in the ham and remove from heat. Transfer 3/4 of the filling to a 28cm butter greased pie dish.
Beat the eggs, cream, nutmeg, salt and pepper together and stir in the cheddar cheese. Pour over the filling and with a fork just slightly move the veggies to make sure the egg mixture went through. Scatter the remaining broccoli, ham and onions on top and bake in oven 180C/350F for approximately 45 minutes to 1 hour or until set and slightly browned on top.

Day 2 of the Big Sky Conference was a huge success! Not only did we have super attendance again but lots of education and vendor time!

We were honored to have CMS in attendance from the regional office in Denver! John Hanigan and his staff spoke to the attendees and let them speak on their pain points and problems they have. Very, very beneficial meeting for everyone.

The night capped off with our banquet in the barn with a delicious prime rib supper, ice cold beverages, and lots of fun, fun drawings and the Calcutta being the hit of the night!

The first day of the Big Sky Conference is in the books. What a great time, fabulous education, and a day to remember.
The ladder ball tournament was fabulous with Sarah and John playing Sara and John! The AcuServe team taking home Champs! Congratulations!

Good News! A special thank you to our members who worked so hard for our industry.

With the holidays almost upon us, there was one last major vote in the 117th Congress before sine die. Today, they voted on a $1.645 trillion Omnibus package that included some language for the industry.

What a fantastic 2022 Big Sky Conference!
Take a look at the fantastic education, wonderful speakers, great times, and tremendous networking times had by all!
From tours, to the very deserving Lifetime Memorial Award presentation to Dan Harrington, our famous Ladder Ball Tournament, and our excellent banquet in the barn, we had 3 days of an excellent conference!
