January: Hearty Winter Eating
This is one of my go-to winter meals when digestion feels off or energy is low.
In colder months, the body tends to do better with meals that are warm, hearty, and fully cooked — the kind of food people relied on long before year-round access to everything. Simple stews like this are grounding, nourishing, and much easier for the body to digest and actually use in winter.
Simple & Hearty Crock Pot Beef Stew
Ingredients:
- 1½–2 lbs beef stew meat or chuck, cut into chunks
- 4–5 carrots, chopped
- 3–4 potatoes (or other root vegetables), chopped
- 1 onion, diced
- 2–3 cloves garlic, minced
- 3–4 cups beef broth (enough to mostly cover)
- 1–2 tbsp tomato paste (optional, for richness)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried thyme or rosemary
- Optional: splash of apple cider vinegar or Worcestershire at the end
Instructions:
1) Place all ingredients in the crock pot.
2) Stir gently to combine.
3) Cook on low for 7–8 hours or high for 4–5 hours, until the meat is tender and vegetables are soft.
4) Taste and adjust seasoning before serving.
I often serve this over mashed potatoes for a more grounding, winter-appropriate meal.
