Try this recipe for Yellow Dahl Tadka. It’s gluten free, vegan and super packed with protein and other essential nutrients.

My version turned out a little different, but the great thing is that it still turned out delicious! I added more tomatoes than intended and decided to leave the lentil intact because we loved the texture...and also the fam was getting hungry! We also added fresh okra from our garden because we had lots of it. Can’t wait to try it again.

It’s ok if our dishes take their own little spin. We use what we got, move past our mistakes, rejoice in the process and enjoy the blessings of a home cooked meal, filled with love. Everything is a learning process. Can’t wait to try it again.

We’re supper excited to see these seeds sprouting up and growing strong. Here are our Top 3 Tips for growing your own vegetables from seed.

1) Choose the right seeds. If in doubt, go local. They will be best suited for your area.

2) Use seeds marked for the current year as they can loose viability over time. Keep them in the fridge to help them last longer.

3) Use the right potting soil...1 part garden soil, 1 part peat moss/coco coir, 1 part perlite/sand works well. A good mix provides just the right amount of oxygen, moisture and room to grow.

Picking green beans at a friend’s farm and these are the pictures our 5 year old told me to take. Having a garden is a great way to get kids out of the house. Although there can be element of ‘Hollywood’ in their play, it grants them a passport into their imagination to create and invent new stories and worlds, with themselves as the main characters!

It’s easy to get creative when growing salad greens. We love the different textures. It makes eating healthy super fun.

We LOVE zucchini. Fry it up in a pan with mushrooms, onions, garlic and butter....mmm....so delicious! More intriguing is how it actually grows. Give it lots of space, water and sunlight and you will be amazed.

I just think of all of God’s creations. Each little seed can sprout and grow into very specific plants, each with its own uniqueness, and special qualities. Put them together...some of this....and some of that.... and you have a culinary masterpiece.

With all this racial strife going on in the world today, do we truly see? We are all different, unique and special in our own right. When we work together and celebrate our differences, we are God’s masterpiece.

One fact I know is that the fruit and veggies from our own harvest taste much better than any we bought from the closest supermarkets near us or Costco and Walmart. Thanks COVID-19 for the opportunity to cultivate and plant our own food in a home garden.
