Kona Sea Salt is located on the Kona coast of Hawaii, the “Big Island” in the Hawaiian island chain. We pride ourselves in producing a renowned sea salt, which continues to earn accolades from top executive chefs and fitness experts for its delicate flavor and rich trace mineral content. Kona Sea Salt is entirely hand tended from the moment our deep seawater arrives on site. After about four weeks

of unhurried evaporation within our closed drying systems, the bright Hawaiian sun transforms the seawater into our characteristic, pure white Kona Sea Salt crystals. The crystals are gently scooped into buckets and wheeled to covered wooden hoppers. Here, the remaining moisture is drained from the salt creating a concentrated brine called nigari*, or bitterns. Once it’s fully dried, the salt is patiently inspected to exacting standards, then packaged for sale. Kona Sea Salt destined for our retail product line is oven-dried on site in accordance with State of Hawaii health requirements, then labeled and packaged by hand for shipping. If you have been to the Kona Salt Farm recently you might wonder what is going on in our growing ponds or “raceways” that have not been used in a while. They were used to grow microalgae to make Astaxanthin in earlier days and are now being used by Symbroisa for their cultivation of Limu Kohu while they are building their own facility.
Limu Kohu is a native Hawaiian seaweed with deep cultural roots. It has long been used both as a food and seasoning. The same limu is now reimagined in a powerful way, added to cattle feed it significantly reduces (by up to 90%) methane emissions, a powerful greenhouse gas. Alexia Akbay was awarded 30 under 30 by Fortune Magazine for social impact work. Congratulations to her and the entire .co team for their work. Ipolani showing our new hothouses. This video is from a couple of weeks back and the salt has now been harvested. Salt crystalizes differently under different conditions. In our hot houses, the salt “flakes”, in the tunnels it forms crystals. Even within the same tunnel the crystals have different sizes. Interesting to see the difference.

Great to see the progress of Calley O’Neill’s mural at the Kona International Airport. There will eventually be 8 12’x40’ size walls of stained glass mosaic. If you get a chance be sure to check it out up close. Every single piece is made and cut by hand and carefully installed.

Aloha from Mason and Ellie prepping for another storm heading our way - hopefully it will not as bad this time. They are working on protecting the fan boxes. We have a filtered ventilation system gently pushing moist air out of the evaporation tunnels, keeping as much of the heat in as possible but moving the moisture out. Another benefit of them is the positive air pressure it creates in the salt tunnels. It keeps any dust and dirt out as well and keeps our salt naturally so pristine. Hauʻoli p**e Merrie Monarch kākou!
Every spring, Hawai’i comes alive with the spirit of Merrie Monarch Festival This week and weekend, Hilo is filled with incredible celebrations, art and craft fairs, fashion, hōʻike (exhibitions), cultural demonstrations, and of course the world-renowned hula competition honoring the legacy of King David Kalākaua, who helped revive hula and Hawaiian traditions.
For those lucky enough to get a chance to be in Hilo this week is something truly special. And for those who aren’t able to attend in person you can watch it on livestream on the Merry Monarch website and YouTube channel and locally in Hawaii on K5.
Ipolani’s brother is a Kumu Hula, his hālau, Hālau Hiʻiakaināmakalehua will be competing. We are so proud and excited to watch them share their ʻike, dedication, and artistry. Wishing them and all of the competing halau a beautiful, strong, and inspiring Merrie Monarch.

If you have never tasted Deep Ocean Water. This is water that literally just came to the surface from 2,200 feet after 900 years of travel. Interesting to taste the difference of deepsea and surface water. Deep Ocean Water is actually lower in salinity, if you ever had a mouthful of surface water, you can really tell the difference. We built a little fountain at the farm where you can try it!
