Kona Sea Salt is located on the Kona coast of Hawaii, the “Big Island” in the Hawaiian island chain. We pride ourselves in producing a renowned sea salt, which continues to earn accolades from top executive chefs and fitness experts for its delicate flavor and rich trace mineral content. Kona Sea Salt is entirely hand tended from the moment our deep seawater arrives on site. After about four weeks of unhurried evaporation within our closed drying systems, the bright Hawaiian sun transforms the seawater into our characteristic, pure white Kona Sea Salt crystals. The crystals are gently scooped into buckets and wheeled to covered wooden hoppers. Here, the remaining moisture is drained from the salt creating a concentrated brine called nigari*, or bitterns. Once it’s fully dried, the salt is patiently inspected to exacting standards, then packaged for sale. Kona Sea Salt destined for our retail product line is oven-dried on site in accordance with State of Hawaii health requirements, then labeled and packaged by hand for shipping. Whether it's a single grinder, or full pallets shipped by sea, we make certain that every order of Kona Sea Salt arrives as quickly and affordably as possible from our Kona production site. But in Hawaiʻi’s harsh, rocky leeward landscapes, it thrives.

Just North of us was once the site of a historic royal fishpond, Pa’aiea. It was completely covered by lava from the 1801 Hualalai eruption but you can still see traces of it. Look for areas of orange/rust colored lava, next time you are flying in or out of the Kona Airport. When the lava met with the seawater from the fishpond, the water boiled and the resulting oxygen “rusted” the iron in the lava. There is a series of videos on the Hawaii Ocean Science Technology made by .io with naturalist Bobby Camaro. These videos are really well done and well worth watching. Next time you fly in or out of Kona, look down and watch for lava that appears almost rusty, orange in contrast to the black. It shows where the royal fishpond Pāʻaiea was before it was completely filled by the 1801 lava flow. When the lava and seawater and oxygen met, it oxidized.

The restorative force of the ocean somehow feels especially strong here in Kona. The ocean restores us in so many ways, whether we swim in it, spend time near it or use wellness products drawn from its water. Our Kiawe Tree ended up getting a new companion tree, a Hau Tree. Hau Trees are really interesting, they are Canoe Plants in two ways: They are not native to Hawaii but were brought by Polynesians. Their wood is light and buoyant and was used in building outrigger canoe boom, fish floats and light weapons. The bark was made into cordage and pounded into kapa. The flowers are amazing too, they only last a single day and start off yellow in the morning and turn red before dropping at the end of the day. If you come to the farm, check out our new Hau Tree. We were able to save the Kiawe tree, it was still strong at its core, we just trimmed it a little bit so it can weather those Kona winds.
