Enjoy a cozy, feel-good treat without compromising your health goals! These moist, spiced muffins are made with gluten-free oat flour, monk fruit, applesauce, and warm cinnamon…so you can indulge while still nourishing your body. Perfect for breakfast on the go or a quick snack between busy days. Just be sure to check that they fit your personalized nutrition plan and allergy tips before baking! 

Ingredients:
2 C dairy-free, organic butter alternative, softened
1¼ C monk fruit sweetener
1 duck egg
2 C high-quality gluten-free oat flour
1 tsp aluminum-free baking powder
1 tsp organic cinnamon
2 tsp baking soda
4 tsp ground cloves
4 tsp sea salt
1 C organic unsweetened applesauce

Directions: 
Preheat oven to 350°F.
Line a muffin pan with liners or grease/spray the inside of the tins with coconut oil, avocado oil, or olive oil.
In a large bowl, beat together the buttery spread with the monk fruit sweetener.
Add in the egg and beat until well combined.
In a medium bowl, combine the dry ingredients.
Add half of this flour mixture to the batter and mix.
Add half of the applesauce and mix.
Repeat last two steps with the remaining flour mixture and applesauce until fully incorporated.
Fill each muffin cup 2/3 of the way full with the batter.
You will have extra batter left, so you can fill another muffin tin with the remaining batter, or if you only have one muffin tin, save the batter until your muffins come out and bake the rest in that tin.
Bake for approximately 25 minutes or until a toothpick comes out clean.
Remove muffins from the tins and place them on a wire rack to cool.
Enjoy!
