Who says you can't eat fries and stay fit??

Here is the perfect side dish for your summer bbq that won't sabotage your clean eating goals!

Oven Baked Steak Fries

- 1/2 tsp cumin
- 1 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 TBSP olive oil
- 4 medium russet potatoes

1. Preheat oven to 400 degrees F.
2. Mix spices in medium sized bowl.
3. Add olive oil and combine well.
4. Cut potatoes into 8 wedges each.
5. Add potatoes to seasonings and toss to coat.
6. Place potatoes on a lightly greased baking sheet ( I use avocado oil to grease my baking stone)
7. Bake potatoes for about 40 minutes.

I make this recipe every week as my meal prep. I LOVE it! It's so warm, comforting and makes me feel happy smelling the cinnamon and apples baking!

*** Cinnamon Apple High Protein Baked Oatmeal***

-2 cups old fashioned rolled oats
-1 cup cottage cheese
-1 cup milk (dairy or plant)
-2 large eggs
-1 1/2 cups apples (about 1 large apple), chopped
-1/3-1/2 cup protein powder (get creative with the flavor!)
-2 Tbsp maple syrup and honey
-1 tsp vanilla extract
-1 tsp ground cinnamon
-1/4 tsp ground nutmeg (optional but recommended :))
-1 tsp baking powder
-1/4 tsp salt
-Zest of half a lemon (optional but SO good!)

1. Preheat oven to 350 F and grease an 8x8 inch baking dish.

2. Whisk together cottage cheese, milk, eggs, maple syrup, vanilla, and lemon zest until smooth.

3. Stir in oats, protein powder, baking powder, cinnamon, nutmeg, salt and fold in chopped apples.

4. Pour mixture into prepared baking dish and smooth the top.

5. Bake for 30-35 min until and golden.

6. Let cool 10 min before slicing and serving with a dollop of vanilla yogurt.

Spring is here!

It's a beautiful weekend.

Just out of curiosity, are you adding a new adventure into your spring/summer adventures this year?

For me it is getting back to fishing.

I have upped my hiking game the last 5 years and now I want the counter-balance of being able to relax in nature.

Fishing is my way of doing that.

What are you planning to add? I am super curious, so please comment!

Our shoulders are not that weak, but they are becoming progressively imbalanced given our sitting, and screen times.
