A look into the process 👁️ This is the first step in making our Tallow 🐄🌿We render as much pure fat off the suet and then do multiple rounds of wet rendering. It’s all processed by hand, in the kitchen, at home.

What is suet? It’s the fat from the animal which is typically shaved off the main tissue and stored into smaller chunks that may be used for cooking but more typically gets put to waste! It’s one of the most nourishing parts of the animal and most butcheries will have some on hand either for free or very low cost. The process of rendering into purified tallow, is tedious and requires careful attention to detail via using your senses to determine if smell is eliminated, color is white & pure, etc.
