🥜 Beans & Lentils – Protein-packed, full of fiber, and perfect for soups, salads, or side dishes.

🍠 Budget-Friendly Nourishing Bowl Recipe 🍳
Sweet Potato & Black Bean Power Bowl
This easy, nutrient-packed meal is affordable, filling, and delicious—perfect for meal prep or a quick weeknight dinner! I love bowls.

🥘 Ingredients:
✅ 1 large sweet potato, diced�✅ 1 cup black beans, drained & rinsed�✅ ½ cup brown rice, cooked�✅ 1 egg, cooked to your liking (optional for added protein)�✅ ½ cup frozen spinach or mixed veggies�✅ 1 tsp olive oil (or water for sautéing)�✅ ½ tsp garlic powder�✅ ½ tsp cumin�✅ ½ tsp paprika�✅ Salt & pepper to taste

🥣 Directions:
1️⃣ Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, garlic powder, paprika, salt & pepper. Roast for 20-25 minutes until tender.�2️⃣ While the potatoes roast, cook brown rice according to package instructions.�3️⃣ In a pan, sauté black beans and frozen spinach with cumin, salt, and pepper until warmed.�4️⃣ Fry or scramble an egg (or skip for a plant-based option).�5️⃣ Assemble your bowl: Brown rice as the base, add roasted sweet potatoes, black beans, and veggies. Top with your egg for extra protein!

🍓Here’s some strawberry trivia for you!

🍓Strawberries belong to the rose family – and they’re the ONLY only fruit that has seeds on the outside.

🍓They’re super delicious and super good for you, too.

🍓They’re packed with vitamins and minerals, including vitamin C, folate, & potassium – which means they are linked with immune health AND lower blood pressure.

PLUS: their antioxidants can help fight bacteria, lower your cholesterol and blood sugar levels, protect your heart, and even fight some cancers.

Strawberries also contain fiber that can feed the good bacteria in your gut to help keep your digestive system running smoothly.

👉TIP: When possible, choose organic strawberries because conventionally raised berries are often sprayed heavily with pesticides.

💃Just say yes to strawberry salsa!
This sweet and spicy treat is PERFECT for outdoor barbeques and pool parties.

Enjoy over fish or chicken, or as a sweet and spicy dip.

🍓Strawberry Salsa
(6 servings)

1 pint strawberries, hulled and diced
1 jalapeno, seeded and minced
¼ cup minced red onion
1 lime, juiced
½ cup loosely packed cilantro, minced (or to taste)
Salt and black pepper, to taste

Place all the ingredients in a bowl and gently stir. Let sit for at least 20 minutes to give the flavors a chance to combine.

Taste and adjust the seasonings. If it needs a little sweetness, add a ½ tsp or so of honey. Enjoy!
