Sweet Potato & Black Bean Power Bowl
This easy, nutrient-packed meal is affordable, filling, and delicious—perfect for meal prep or a quick weeknight dinner! I love bowls.
🥘 Ingredients:
✅ 1 large sweet potato, diced�✅ 1 cup black beans, drained & rinsed�✅ ½ cup brown rice, cooked�✅ 1 egg, cooked to your liking (optional for added protein)�✅ ½ cup frozen spinach or mixed veggies�✅ 1 tsp olive oil (or water for sautéing)�✅ ½ tsp garlic powder�✅ ½ tsp cumin�✅ ½ tsp paprika�✅ Salt & pepper to taste
🥣 Directions:
1️⃣ Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, garlic powder, paprika, salt & pepper. Roast for 20-25 minutes until tender.�2️⃣ While the potatoes roast, cook brown rice according to package instructions.�3️⃣ In a pan, sauté black beans and frozen spinach with cumin, salt, and pepper until warmed.�4️⃣ Fry or scramble an egg (or skip for a plant-based option).�5️⃣ Assemble your bowl: Brown rice as the base, add roasted sweet potatoes, black beans, and veggies. Top with your egg for extra protein!
