Summer produce is the best! Until it’s not and you realize there’s more than one container of fruit on the bottom shelf primed for the mold to grow. Instead of tossing it and feeling guilty about waste, start chopping! Making produce easy to eat accomplishes two goals: 1. More nutrition! 2. Saves money!
These two salads were made entirely with leftovers. Cut corn off the cob, added a half green pepper, diced tomatoes and black beans, half an onion. Dressed with spices, lime juice and olive oil.
The fruit salad was literally picking out berries and cherries that could be salvaged. Added a nectarine. Don’t let less than perfect ruin what could be your next delicious meal!
