This healthy seven-layer dip is loaded with beans, creamy protein-rich yogurt, taco seasoning, guacamole, crisp veggies, and melty cheese. Fresh, flavorful, and always a crowd favorite for potlucks, game days, and parties.
Ingredients:
• 1 (15 oz) can refried beans of your choice (black beans are our favorite!)
• 2 cups plain green yogurt
• 1 packet reduced sodium taco seasoning
• 2 medium avocados
• 2-3 tbsp chopped cilantro (for guac)
• 1 jalapeno, seeded and diced
• ½ lime, juiced
• Salt & pepper to taste
• 1 cup shredded cheddar or Mexican cheese
• 1 ½ cups quartered grape tomatoes
• ¼ cup sliced black olives
• 2 tbsp finely diced red onion (can sub green onion)
• ½ cup fresh cilantro (for garnish)
• Jalapeno slices (optional)
Directions:
1. Spread refried beans on the bottom of a 9x9 pan.
2. In a medium bowl, mix the yogurt and packet of taco seasoning. Spread on top of refried beans.
3. Make the guac: mash avocados with a fork until smooth but slightly chunky. Stir in 2-3 tbsp of cilantro, diced jalapeno, lime juice, salt and pepper. Spread on top of yogurt
4. Add remaining layers in the following order: shredded cheese, tomatoes, black olives, diced onion, cilantro and a few jalapeno slices.
Recipe can be made 24 hours in advance, but it is best freshly made. Serves roughly 10. Enjoy with chips, carrot sticks, celery or cucumber slices.
