🌿 Homemade Meat Stock
Meat stock and bone broth aren’t the same thing, and the difference matters for improving gut health.
Homemade meat stock is incredibly gut-loving, soothing, and often a gentler alternative to bone broth.
Because it’s cooked for a shorter time, it tends to be lower in histamines and easier on sensitive digestion while still providing gelatin and amino acids that support the gut lining.
After diving deeper into the differences between meat stock and bone broth, this is something I’ve been making much more often (and it’s quicker to make!)
You’ll need:
• A stock pot
• Filtered water
• 1 whole chicken
• Any vegetables you’d like to add (carrots, celery, and onion work great)
• Rosemary and thyme (fresh is best, but dried works too)
• High-quality salt
• Peppercorns
How to make it:
Add the chicken and vegetables to the pot. Cover with filtered water so it sits about an inch above the chicken. Add the herbs, salt, and peppercorns.
Bring to a boil, then reduce to a gentle simmer and cook for 2–4 hours. Skim off any impurities that float to the top.
Remove the chicken, then strain the stock and store it in the fridge. Save the meat and vegetables for quick meals during the week!
