Happy World Health Day! Let's celebrate with this healthier take on an old favorite - it's gluten-free, high-protein, low-carb and packed with springtime goodness! Maybe it'll come in handy this Sunday. 🐰 🥕
Prep time: 15 minutes ; Cook time: 25 minutes
Makes 6 slices (serving size 1 slice)
INGREDIENTS:
⅓ c. Lindora Vanilla Protein Shake Mix
¼ c. calorie-free sweetener (we like xylitol or monkfruit)
2 tbsp. coconut flour
¼ tsp. baking soda
dash salt
1 ½ tsp. pumpkin pie spice
¾ c. shredded carrot
¼ c. unsweetened applesauce
2 tbsp. almond butter
1 large egg white
FROSTING:
6 oz. reduced fat greek cream cheese
1 ½ tbsp. Lindora Vanilla Protein Shake Mix
⅓ c. calorie-free powdered sweetener*
¼ tsp. pure vanilla extract
DIRECTIONS: (Preheat oven to 325 degrees F)
1. In a medium mixing bowl, whisk together dry ingredients.
2. Finely grate one medium carrot (or enough to yield ¾ cup).
3. Add carrots and remaining ingredients to dry mixture and mix to combine. (Add 1-2 tbsp. almond milk or water if batter is too thick to spread.)
4. Scoop batter into a 7x5 or 8x6 baking dish lightly coated with cooking spray or lined with parchment (recommended).
5. Bake 25-35 min. or until a toothpick inserted in center comes out clean.
6. While cake cools, mix frosting ingredients until smooth. (Add 1-2 tbsp. almond milk or water if frosting is too thick to spread.)
7. After cake is cool, spread with frosting. Enjoy immediately or store up to one week in fridge.
