Ok- so many asked that I’m offering it up! But of course, if you want a full demo and the experience of staining your own fingers purple, join me on May 2nd & 3rd for my Weekend of Wellness for a full immersive experience in making herbal preparations!
Elderberry, Ginger, and Rosehip Syrup
5 cups fresh elderberries, stems removed, well garbled!
1.5 cups fresh ginger, peeled and chopped
3/4 cup dried rose hips
6 cups water
Combine herbs and water in a medium, non-metallic saucepan and bring to a rolling boil. Reduce heat and simmer, covered, for 45 minutes, stirring often.
Remove from heat, and let settle for ten minutes, then strain and discard pulp (in your compost pile of course!)
Add 2.25 cups of sugar, stir well, and return to heat and full boil for 2 minutes.
Ladle into half pint jars, wipe rims and add lids and rings. Process in boiling water bath for ten minutes.
Enjoy as a drizzle on oatmeal, pancakes, as an addition to cocktails or mocktails, or straight off the spoon!

This beautiful, aptly-named plant is one of the first to bloom in the Spring. It’s capable of generating heat, melting the snow to emerge from the wet ground it prefers, attracting early pollinators with its skunk-like odor. A member of the Arum family, its cup like flowers are a welcome sight in late Winter. Not edible, at least to humans, but has a history of medicinal applications with careful preparation. Reader beware- if you choose to pick a leaf and smell it, it can literally burn you, hot stuff!
