A couple nights ago I decided to try making eggplant 🍆 a little differently. Please to report that the final product was even better than I anticipated.

Here's what I did
Cut eggplant in rounds, salted and patted excess
moisture off with paper towel
Dipped each piece of eggplant into and egg and milk mixture.
Dip each slice in white rice flour, shaking excess off.
Then dip back into egg and milk mixture. Finally, dip each lice into gluten free breadcrumbs ( I make my own from ends of my gluten free bread in my food processor.

I spread each piece of eggplant out onto a olive oil brushed lined cookie sheet sprinkled some olive oil on each slice and roasted them in the oven @ 375. Flipped halfway through and drizzled a little more olive oil on top. Remove from oven.

I then topped each slice with a little pesto I had previously made and topped that with slice of roasted heirloom tomato and slice of low fat mozzarella cheese.

Served with a sprinkle of parmesan cheese.
