Recipe #3: Quick N Easy Ziploc Omelet
Crack 2 eggs into a Ziploc freezer bag. Add 1/2 cup chopped broccoli, 1/4 cup diced tomato, 1/4 cup diced onion, 1/4 cup chopped mushrooms & 1/4 cup shredded cheese. Seal bag. Shake to mix. Let air out of bag & reseal. Place bag into rolling, boiling water for 13 minutes. (You can cook multiple bags in a pot, 6-8 in a large pot.) Open bag & omelet will roll out easily! You can also make the bag the night before. *Second option for ingredients to add to eggs: 1/2 cup black beans, 1/4 cup salsa, 1/4 cup shredded cheese & top with 1/4 avocado.

Recipe #2: Healthy Tiramisu
Ingredients: 16oz nonfat plain yogurt
16oz cream cheese
16oz lite sour cream
1 tsp honey
1/2 tsp vanilla extract
1 cup Italian Roast coffee, room temp
2 boxes vanilla wafers
2 Tbsp cocoa powder, unsweetened
In a large bowl, combine sour cream, yogurt, cream cheese, honey and vanilla extract. Beat with an electric mixer on high speed until smooth. Spray sides of a 3-Qt rectangular baking dish and layer with vanilla wafers. I put one layer of wafers flat side down in dish and then fill in gaps with wafers upside down. Pour half of the coffee mixture over cookies (I use a turkey baster). Spread half of cream cheese mixture on top. Repeat with remaining ladyfingers, coffee mixture and cream cheese mixture. Sprinkle with cocoa powder. Cover and chill for at least 6 hours or up to 24 hours. If desired, sprinkle serving platter with additional unsweetened cocoa powder. Cut dessert into squares; arrange on platter. If desired, garnish individual servings with chocolate curls.

Recipe #1: Hot Mama Veggie Soup
Ingredients: 1 medium sweet onion chopped
3 Tbsp olive oil
2 (14oz) cans diced tomatoes with green chilies
1 (12oz) can whole kernel sweet corn
40 0z vegetable broth
2 small to medium red potatoes, chopped
1 bunch cilantro, chopped
1 zucchini, chopped
1/2 can black beans, rinsed and drained
salt and pepper
Saute onion in oil on medium heat until clear, about 8 minutes. Add tomatoes, corn, broth, potatoes and cilantro; cook about 20 minutes. Add zucchini and beans, then cook an additional 15 minutes. Salt and pepper, to taste. Makes 5-6 servings.

Went to the grocery store yesterday and berries are in abundance and on sale!! Strawberries, raspberries, blueberries and blackberries. Buy some for now - add to yogurt, cottage cheese or oatmeal. Get a couple extra containers to freeze and use when the price is high. Berries are great as a sweet dessert, snack or addition to almost anything or anytime of the day!

Salads should not be boring! Start with a base of romaine lettuce or organic mixed greens. Add chopped vegetables like bell peppers (green red or yellow), tomatoes, red onions and/or zucchini. Add a protein like grilled chicken, canned tuna or baked salmon. Garbanzo and black beans are a great addition. Don't forget a healthy fat like avocado! Msg me for a healthy caesar dressing!

Kiwi - Spring Super Food! 2 kiwis has 93 calories. Goes good with pineapple and guava. Contains vitamin C, Folate, Vitamin E, Potassium, Fiber, Carotenoids, polyphenols, chlorophyll, glutathione and pectin. Add chunks to your turkey or tuna salad or puree into a smoothie with bananas, blueberries and nonfat plain yogurt.
