I'm back in Vegas (short trip) for business, friends and family. Yesterday afternoon led into an evening of feasting with Tom Kha soup with fresh Galangal root, Lemongrass, Thai Basil, Kefir leaves, Argentinian Wild caught shrimp, an assortment of other seasonings and vegetables Julienne style, thinly sliced Beef Ribeye Bulgogi - 불고기 and Chicken Bulgogi - 닭불고기, Chamchi Kimbap - 참치 김밥, finalizing with Korean Chocolate Cake (Yes, Koreans dominate with pastries.) and Barley Tea - Boricha - 보리차; all homemade from scratch except the cake. It was Patricia Richards' first time learning Kimbap. However, her Tom Kha is hands down better than any Thai restaurant's. I haven't made homemade Kimbap for some time, so it was great practice and it was amazing !!!

Have you ever eaten Parmigiano Reggiano cheese?

I’ve been researching for a side project in an effort to find alternatives for generational comfort foods, staples for many, to bridge the gap between accessibility and palatability. One of my personal deterrents is cheese with the exception of Swiss cheese from time to time. My 3 most popular “go to” cuisines are Mediterranean, Coastal Mexican, and Asian (over 90% for this one).

In traditional Chinese medicine theory, cheese is a type of dampening food that can cause dampness to accumulate, then stagnation in the body leading to weight gain, imbalance, and illness. In contrast, Italians and Europeans do not present the same signs and symptoms.

Many years ago, companies such as Kraft formulated their own version of Parmesan cheese which is not Parmigiano Reggiano. Parmesan cheese is processed, only aged for 10 months, and filled with ingredients such as cellulose; which is wood pulp. The milk rendered from these cows are based from grains and not grasses. So essentially, much of the foods in the West lack nutritional content and have created stigmas along the way.

Parmigiano Reggiano cheese from Italy is in a class of its own. The cows are grass fed and free to roam and the milk rendered is converted into a cheese that is aged for 1 to 3 years. More or less, the fermentation process is efficient in comparison to Kraft’s. Loaded with nutrients such as probiotics, vitamins B12, calcium and zinc, Parmigiano Reggiano has been clinically shown to clear arteries, reduce high blood pressure and clearly debunking myths.

According to Summer et. al, (2017), ”Proteins in Italian hard cooked types of cheese possess biological properties attributable to potentially bioactive peptide sequences; these peptides, hidden and inactive in the primary protein structure, may be released and activated by proteolytic processes during the technological treatment or during gastrointestinal digestion and act in the body by influencing physiological processes and modulating various biological functions. In particular, several ACE-inhibitory peptides were found in Parmigiano Reggiano cheese samples and in their relative intestinal digestate.

Among all these properties, two in particular seem to be of great interest: the ability to keep blood pressure regulated, thanks to ACE-inhibitory peptides, and the possibility of these types of cheese to act as foods rich in bioavailable calcium, especially for countries such as Asia, where osteoporosis in menopause is an increasingly important issue. This evidence needs to be highlighted to counteract the negative impact of the smear campaign against animal foods that are publicized to exert a negative influence on human health.”

Italians do not eat large volumes of cheese as Westerners do. Much of the time, they sprinkle small amounts on dishes. This process to create delicious meal alternatives for my patients merging what their palates are accustomed to with healthier options with the addition of herbs will take more time. However, it will be all worth it in the long-term.

A gift from the Abbot at Buddhist Association of Colorado temple garden; .艾草 - Ài cǎo - Mugwort. Seeds from a temple in Taiwan were brought to a temple in Cleveland and he brought a seedling to Denver where it grew in abundance.

Mugwort has been well-recognized in China, Korea and Japan as a healing herb that is both food and medicine. Fresh mugwort leaves are a delicious food with a unique fragrance. Fresh mugwort leaves can be boiled with eggs or made into a glutinous rice cake as food dishes. Dried mugwort can be stored for the long term and used to treat diseases, as recorded in the herbal medicine of all dynasties for more than 2,000 years.

Mugwort has the functions of regulating qi and blood, dispelling cold and dampness, warming menstruation, hemostasis, and skin protection. Mugwort is a warming tonic, so eating mugwort leaves can play a role in repelling cold. For example, if you suffer from cold in winter, you can drink some mugwort leaf water to get rid of the cold in the body, which can achieve a therapeutic effect. In addition, mugwort has the effect of warming the meridian and stopping bleeding. Boiled eggs with mugwort leaves is a commonly used home-cooked dish, which has the functions of dispelling cold and stasis, removing dampness and relieving itching, and warming the uterus. It is natural health food for women.

The substances contained in mugwort have antibacterial, antifungal, antipruritic, skin beautifying, and other effects. You can drink boiled water with either fresh or dried mugwort in order to achieve these benefits. Many people use mugwort to boil water for bathing or fumigation, and some people use it to soak their feet, all of which can have the same effect. A mugwort bath can treat eczema and also relieve itchy skin.

Boiled mugwort to soak your feet can activate the blood vessels and help to calm the nerves, and improve the quality of sleep. If you put the dried mugwort leaves into a cloth bag or pillow, seal them to make a mugwort bag and a mugwort pillow. Sleeping on a mugwort-filled pillow can calm the nerves and help you fall into sleep.

Mugwort bags can be put in the closet to repel insects. There is a fragrance in mugwort that mosquitoes dislike, so in summer, mugwort water can be used as a natural protector to the skin to repel mosquitoes and avoid mosquito bites.

Mugwort can also be made into moxa sticks. Moxibustion is a traditional Chinese medicine moxibustion method, which uses moxa sticks to burn the acupoints of the human body to cure diseases. Moxibustion has health care functions such as warming the meridians, dispelling cold, promoting qi and blood circulation, and strengthening the body.

Due to the many health benefits of eating and using mugwort, there is a saying in China that "with three years of mugwort in the house, the disease will not come again", and there is also the custom of picking mugwort and hanging it at the door to avoid "evil" during the Dragon Boat Festival.

Mugwort is an easy-to-grow perennial. It has many health benefits, such as antibacterial, antiviral, hemostasis, increased immunity, antipyretic, sedative, etc., and is truly a gift from nature.
