Wanna know what is for dinner in our house? This is my busy work season, so it must be simple!
Here's this week's plan:
1. Squash Soup - no recipe I just happen to have a jar I want to use on my busy day! But it would be super easy to put squash in to the crock pot and cook it then blend and season it. (I'd probably add some red pepper to give it some oomph!
2. Cabbage wrapped Brats. Again, no recipe..cabbage, brats and whatever you want on them...we like a little onion.
3. Bacon Burger in a Bowl. Make your patty and cook your bacon. Fill the bowl with Salad. Add everything you like on a burger except the bun...
4. Greek Steak bowl.
1/3 cup full fat plain Greek Yogurt
1/4 cup extra virgin olive oil
6 garlic cloves chopped
2 shallots chopped
1 TBSP smoked paprika
1 TBSP fresh oregano chopped
Chili flakes, kosher salt, and black pepper to taste
1 1/2 pounds boneless chicken breasts OR 1 1/2 pounds steak strips
Mix and marinate 15 minutes (or overnight)
Preheat oven to 425 degrees. Roast 15 minutes, toss and bake another 5-10 minutes until cooked through. Broil 1-2 minutes letting the meat char on the edges.
Meanwhile combine:
2 cucumbers chopped
1 avocado diced
2 TBSP lemon juice
1/4 cup fresh dill or 4 tsp dried dill
1 cup per person of chopped lettuce
Add a dollop of tzatziki sauce if desired
5. Chicken Nuggets
(I found some great ones through Butcher Box - organic and darned good - even for adults!)
I'll serve with cooked vegetables
6. Creamy Pork Parmesan
4 Boneless Pork Chops
season with salt and pepper
cook in olive oil at medium temperature until golden and cooked through
add 8 OZ of. sliced mushrooms and cook till soft
add 2 cloves of minced garlic cook about 1 minute
add 1/2 cup heavy cream, 1/2 cup parmesan freshly grated, 1 tsp dried oregano, and a pinch of red pepper flakes
gently stir in 2 cups packed spinach cook until wilted
7. Cilantro Lime Tilapia
Preheat oven to 375
Place thawed fish fillets in baking dish, season with salt and pepper.
In a saucepan add olive oil and butter over medium heat, melt and add 3 TBSP paprika, 4 1/2 tsp cumin, 1/2 Cup lime juice, 3/4 cup of cilantro chopped, simmer for 1-2 minutes.
Pour sauce over the fish and add one sliced lime on top of the fish.
Roast at 375 degrees 20-25 minutes
