🍂 Fall Harvest Roasted Veggie Bowl 🍂
Ingredients:
2 cups cubed butternut squash
1 cup Brussels sprouts, halved
1 medium apple, cubed (skin on)
1 cup kale, chopped
2 tbsp olive oil
1 tsp cinnamon
Sea salt & black pepper to taste
Optional: sprinkle of pumpkin seeds for crunch
Instructions:
Preheat oven to 400°F.
Toss squash and Brussels sprouts in olive oil, cinnamon, salt, and pepper. Roast for 20–25 minutes until golden.
Add cubed apple in the last 5 minutes of roasting.
Remove from oven, toss with fresh kale, and top with pumpkin seeds.
