🥩 Slow Cooker Roast Beef 🥩
Ingredients:
3-4 pound beef chuck roast
1 onion, sliced
4 cloves garlic, minced
2 cups beef broth
1/4 cup balsamic vinegar
2 tablespoons soy sauce or tamari (for gluten-free)
1 tablespoon Worcestershire sauce
1 tablespoon honey or maple syrup
1 teaspoon dried thyme
Salt and pepper to taste
4 carrots, peeled and chopped
3-4 potatoes, chopped into chunks
Fresh parsley for garnish (optional)
Instructions:
Season the beef chuck roast generously with salt and pepper.
Place the sliced onions and minced garlic at the bottom of your crockpot.
In a mixing bowl, whisk together the beef broth, balsamic vinegar, soy sauce, Worcestershire sauce, honey (or maple syrup), and dried thyme.
Place the seasoned roast on top of the onions and garlic in the crockpot.
Pour the beef broth mixture over the roast.
Cover and cook on low heat for 7-8 hours, or until the beef is tender and easily shreds with a fork.
About 2 hours before serving, add the chopped carrots and potatoes to the crockpot, arranging them around the roast.
Once the vegetables are tender, remove the roast from the crockpot and shred it using two forks.
Serve the shredded beef and vegetables hot, garnished with fresh parsley if desired.
