Ever wonder what makes microgreens superior in terms of nutrient content?

Plants are most vulnerable to pest predation in their early stages of life, and require a strong system of defense to make it through to adulthood. Here is where the nutrient cocktail comes in- all those beneficial compounds work as a natural response to danger.

The cocktail is most concentrated during the microgreen stage, due to where the plant is in development.

Essentially, when we ingest microgreens, we are taking those defenses and using them in our own bodies. Damn nature, you crazy!

These are one of our newer varieties! Speckled pea microgreens offer a mildly sweet, crispy crunch and reach maturity rather quickly. Consistency is key, in so many areas of life. We practice it in our growing approach- sowing small batches every few days to ensure a steady supply is always available. Our trays last two people comfortably for a week or more, making consistent supplementation with our microgreens easier to achieve. And, in our humble opinion, consistent supplementation is the best way to do it- nourishing your working body with the vitamins, minerals, nutrients needed to thrive, and delivering them in a way that is most natural for us as humans.

Introducing a new variety available at the Garden- Brussels Sprouts Microgreens (kind of a mouthful, no pun intended).
Brussels sprouts, like broccoli, is a cruciferous vegetable. A defining quality of this group of plants is the presence of naturally occurring, cancer-fighting compounds called glucosinolates. When it comes to total content, Brussels sprouts top ALL the others. They provide special nutrient support for the body's detox, antioxidant, and inflammatory/anti-inflammatory systems, and become a complete protein when combined with whole grains. Supplementing with certain types of microgreens is like adding a multivitamin to your daily routine. But, this multivitamin differs from others in several key aspects. Consuming microgreens raw preserves their full nutrient complex, making them, quite literally, a whole food multivitamin!
So what does this mean?

Microgreens are so versatile- a small amount can add a pop of flavor to your favorite meals. For maximum nutritional benefits, eat them raw and directly after harvest. Sprinkle on top of omelettes, use em as salad toppers, throw em on burgers, TACOS...the possibilities are endless!
However, if I can be honest...my favorite way to eat them is straight up, on their own 🌱😋
