One of my favorite things to see in the early morning sky—soft pink just before the sun comes up.

This morning, I ran 3 miles under that glow.

For some people, that’s nothing.

But for me—it’s a miracle.

Years ago, I was so sick that running wasn’t even on the table.

Just making it through the day was hard enough.

When I get put in charge of dinner… 🍽️😂

So, I got put in charge of dinner recently.

Not a big deal—I actually make dinner pretty often.

But here’s how it usually goes:
👦 Kids: "Uh… what is that?"
👩‍🦰 My wife: "Wow, that was delicious! What’s the recipe?"
Me: "Recipe? What recipe? I don’t use those."

Yep, I’m the “no-recipe” chef. 🙌

Here’s how I roll:
✅ Check the pantry, fridge, and freezer—what’s about to go bad?
✅ Find my carb, protein, and non-starchy veggies.
✅ See if I’ve got a sauce or condiment to bring it all together.

This time?
🥔 Potatoes (cut with an apple slicer… game changer)
🥩 Ground beef + pork with Italian seasoning
🥬 Stir-fried swiss chard, spinach, arugula, and onion

Topped with cheese, cilantro, roasted green chilies, sour cream… and yes, ketchup (because kids 😂).

Everyone made their own version.
Me? I piled it all together. It was SO good.

And the funny thing?
We’ll never eat that exact meal again… because I never make the same thing twice! 😂
