How many of you all are getting your recipes together for Thanksgiving? I’m such a foodie and love to plan gatherings! 👏 I found this one that’s healthy and I’m going to try it! As a health coach I teach what is called a “Lean and Green”! Lean protein filling half the plate and ‘Green’ aka low-carb veggies filing the other half. You’re getting a high protein meal, that honestly is sometimes hard to finish, that tastes amazing, fuels your body AND works towards your goals! At first it may seem weird to not have the starch– but when you’re used to it you’ll love how it makes you feel. No more food comas at the end of the night 😆. As a coach I remind you, it’s not forever, it’s just for now. We’ve got goals! (We add starches back in when you transition from the weight loss to maintenance phase.) As a coach I teach you how to do this, eliminating you having to figure it out!

Where are my Starbucks “Egg White Bites” fans?!?!? They are yummy, but they can also be pricey…especially for 8! 😳 With this simple recipe, you can make them yourself at home…and eat all 8 for a full LG meal! 😋

Egg White Bites

2 cups of egg whites🥚
1 cup raw spinach 🍃
1/2 cup cherry tomatoes 🍅
1/2 cup mushrooms 🍄
2 tbs feta cheese 🧀
1/4 tsp salt (optional condiment)

Preheat oven to 350 degrees.
Lightly spray cupcake tin with non stick spray.
Cook mushrooms, tomatoes, and spinach in a skillet.
Divide veggies into 8 cupcake cups.
Pour egg whites into each cupcake cup. Fill to the top.
Sprinkle feta cheese equally on top.
Sprinkle salt equally on top. *optional*
Bake for 25-30 minutes (350 degrees). ENJOY!!! 😊

Serving size ALL 8 of them!
1 lean 3 greens 2 healthy fats
*optional 1 condiment *

What’s for dinner? One Pan Lemon Pepper Salmon with Garlic Parmesan Asparagus

Here are three quick and nutritious 10-minute meal ideas that are perfect for busy days ⬇️

Each meal is quick, balanced, and packed with protein and veggies!

🟩Veggie Egg Scramble Ingredients:
2 eggs
Handful of spinach or kale
Diced bell peppers
A sprinkle of shredded cheese
Olive oil
Salt and pepper Instructions: Heat a little olive oil in a pan, sauté the veggies for 2 minutes, then crack in the eggs and scramble everything together. Add cheese, season to taste, and serve with a side of whole wheat toast.
🟩Tuna Avocado Salad Ingredients:
1 can of tuna (in water, drained)
½ ripe avocado
Lemon juice
Cherry tomatoes (halved)
Cucumber slices
Salt, pepper, and garlic powder to taste Instructions: Mash the avocado with the tuna, squeeze some lemon juice over it, and mix in the cherry tomatoes and cucumber slices. Season with salt, pepper, and garlic powder. Enjoy on a bed of greens or in a whole grain wrap.
🟩Chicken & Veggie Stir-Fry Ingredients:
Pre-cooked chicken breast (sliced or shredded)
Frozen stir-fry veggies
Soy sauce or teriyaki sauce
Sesame oil (optional) Instructions: Heat a little sesame oil in a pan, add the frozen veggies, and stir-fry for 5 minutes. Add the pre-cooked chicken and stir in a splash of soy or teriyaki sauce. Stir for another 2-3 minutes, then serve over instant rice or noodles.
